This wine is made of 100% Chenin Blanc. We would pair this lean high-acid wine with gnocchi and a creamy mushroom sauce. Chateau Fouquet is a separate property from Domaine Filliatreau and is both organic and biodynamic. The grapes are direct-pressed then half the juice gets fermented and aged in old barrels while the other half is fermented and aged on the lees in stainless steel.
