Domaine Paul Pillot Bourgogne Aligoté, 2021
This wine is made from 100% Aligoté, Burgundy's other white grape. Aligoté expresses fresher orchard fruit notes, like yellow peach and nectarine, than its big brother Chardonnay. Although unable to reach the depth and complexity that certain Chardonnay can, Aligoté is still enjoyed at the local bistro or the Michelin star restaurant all the same. This bottling from Paul Pillot shows all the great mouthwatering freshness Aligoté has to offer, but with a profound expression of lemon zest and honeysuckle. As for the DNA of this wine, 40% of the grapes are sourced from Chassagne-Montrachet, with the other 60% coming from a very rocky area in Remigny, and the juice is aged in large used barrels. Its terroir and élevage really bring out a smooth minerality to underscore such mouthwatering fruit. Pillot's Aligoté is a great choice to pair with grilled lobster, or with a charcuterie of Rossette de Lyon or Saucisson Sec, and Époisses or Délice de Bourgogne.
