This wine is made of mostly Chenin Blanc, with a small percentage of Cabernet Franc. The juice is transferred to bottle before it finishes fermenting, and so it is naturally sparkling. It has an intense limestone minerality and brioche character on the palate. Dry, herbal, refreshing, and super delicious, we would love to pair it with oysters, dressed in any fashion.
