This wines blend changes from vintage to vintage. However it is always predominantly Corvina, with smaller portions of Corvinone and Rondinella. The grapes come entirely from the Valpolicella region of the Veneto. The grapes used in Ripasso wines are previously fermented Amarone grapes. This method extracts a more delicate and aromatic wine that still has plenty of kick. Look for plum, oak and mulled cherries notes and pair accordingly with a lean cut of beef or venison. Valpollicella means "land of many cellars" in the local Italian dialect.
