Honey processing is named for the sticky mucilage that remains on the coffee cherry after pulping. This process imparts wonderful flavors but also helps conserve water. This particular lot is a full honey, also known as black honey, meaning that all of the mucilage was left on the coffee cherry as it dried.  Farmer Profile Ricardo Ureña  Rojas is a fourth generation coffee producer honoring the timeless work of his great-grandfather Hilario Ureña .
