This process imparts wonderful flavors but also helps conserve water. This particular lot has a range of honey processed coffees. Yellow-honey process coffees have less of the mucilage after being de-pulped. The other end of the spectrum is black-honey, in which much of the mucilage remains after being de-pulped.
