The dough will be contained within the side walls of the wood board, and not all over your working area.  Your cookie dough board has two reversible working sides. The deeper side is 1/2” deep, and the reverse shallow side is 1/4" deep.   A single insert is supplied to allow you to roll 3/8” dough, by placing in the 1/2" side.  By using the insert on the 1/4” side, you will now be able to roll out 1/8” pastry dough or fondant.
