The dough will be contained within the side walls of the tray, and not all over your working area. The tray by itself is 1/2" deep.  If you want to roll out 3/8” thick dough, lay one insert in the tray and roll away.  If you need 1/4” dough, place the second insert on top of the first insert, and now you have 1/4” deep
