Todd's Deluxe Summer Sausage Complete Seasoning Kit (Yields 10 lbs)

Our tasty Deluxe Summer Sausage has been a best seller for years. A perfect blend of tanginess brings together our classic old world flavor summer sausage. Pairs well with wild game and domestic meats. We recommend beef or a blend of deer and pork. Serve with sharp cheddar, brie, crackers and/or crostini. Directions: Combine seasoning and quick cure packets with 25lbs of meat mixture until tacky (If needed, add 1 oz water per pound meat until proper texture). Fill pre-soaked casings with meat mixture, fasten with string at desired length, & refrigerate overnight to cure. Bake at 180°F in oven or smoker until internal temperature reaches 165°F. Cool & refrigerate or freeze. Alternative Method: Roll mixture into 9-10" logs of desired thickness & bake in oven at 300°F until internal temperature reaches 165°F (about 1 hour).
