This long-lasting 6-8-inch-long squash stores all winter.. It has a sweet, nutty taste that is delicious roasted, in soups, pies, stews, and curries. Roast the seeds for snacking! It is also rich in vitamins A and C, B vitamins, and many nutrients such as magnesium and potassium. Squash is one of the plants grown in the traditional Native American vegetable growing technique called the Three Sisters. The other two plants in the Three Sisters are beans and corn.
