The HACCP has assigned the color red to the exclusive handling of raw meats. This mid-size butcher knife has been designed and used primarily for the butchering or dressing of animal carcasses of any size. Excellent for a professional kitchen, or meat processing establishment. Specifications Molybdenum Vanadium stainless steel blade has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Hardness is 54-56 RC.
