Ideally intended for deboning chicken, debreasting turkey or cutting beef or fish fillets. Beautiful Asian design, it's a good option for a home or professional kitchen. Specifications Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Hardness is 54-56 RC.
