Hess Collection Chardonnay

"Chardonnay remains American’s favorite wine, agreeable on its own as an apéritif, and a dependable pairing with a wide variety of dishes. With that in mind, we’ve fine-tuned our farming practices in our Su’skol vineyard near San Pablo Bay to set the stage each growing season for fruit that shows off wonderful acidity, complexity and balance. The cooling maritime influences mean this micro-climate stays dependably cool, perfect for crisp, clean and aromatic Chardonnay. Musque clones add a touch of spice and honeysuckle alongside aromas and flavors of white pear, delicious apple and just a touch of tropical melon. We ferment about 20% in new French oak, with the balance in neutral barrels and stainless. More importantly, we allow only 30% to complete malolactic fermentation, putting the spotlight firmly on the fruit. Frequent battonage of the wine in barrel brings a round, rich mouthfeel.
