100% Listan Negro Valle de la Ortava, Canary Islands, Spain From four parcels of 100+ year-old vines, all north-facing and trained in the traditional cordón trenzado (braided vines) at 500- 850m above sea level. 60% comes from the La Habanera plot on volcanic sand at the highest elevation (600m) in the area, and 40% comes from the older San Antonio plot, lower on the slope (350m) and with more clay. The grapes were destemmed and pressed then fermented spontaneously in concrete without temperature control. The wine was racked into 2500L foudres and 350L barrels to rest and undergo malolactic fermentation. Bottled without fining, filtering, and only a small addition of sulfur. VEGAN. Valle de la Orotava is less a valley than the northwest slope of Teide that reaches down to the Atlantic Ocean, La Orotava was one of the first places planted to vines in Tenerife.
