I’ve always loved using savory ingredients in my gelato, and Poblano was one of the first flavors I concocted in my Downtown LA test kitchen in 2012. It is made by steeping roasted poblano chiles in sweetened milk. The chiles lend a layer of complexity that just keeps you going back for more. Is it spicy? Is it sweet? You decide.
