Ginger Macadamia Nut Butter Cookies

Spicy, crunchy, and chewy all at the same time!  Roasted macadamia nuts, macadamia nut butter, and fresh creamery butter form the basis of this cookie. Notes of caramel add richness with just a hint of toasted coconut for a taste of the tropics. This cookie packs in a lot of flavor!  From Tom: "Years ago I tasted my first triple-ginger cookie—it was filled with intense gingerness. When I started exploring local Hawaiian flavors, ginger was the first go-to ingredient that came to my mind. Remembering my love of intense ginger, I set about to create something better. And not wanting to stop with just ginger, I began experimenting with coconut, macadamia, and raw turbinado sugar, which adds a rich caramel flavor without being overly sweet. The result is our Ginger Macadamia Butter Cookies. Try one for the first time—just when you think this a pretty good cookie, the spicy bits of candied ginger hits your mouth with a resounding “Wow!” Pairing: Pairs well with a nice light dry white wine.
