Usually it takes at least a week to make them from scratch, but if you have Kosyo’s Shibazuke Pickle Mix, you can make exquisite shibazuke overnight. The steps are very simple—coat seasonal vegetables with the mix and refrigerate them for half a day. This results in lightly seasoned, crisp vegetables with a touch of fruity ume plum sourness. You can eat them like an oil-free salad! Also, since the mix does not have the typical pink shibazuke color, you can retain the vegetable’s original color.
