Late in ripening, sharp, lemony, and high in sugars,this variety of apple was traditionally keptover strawin the ganbaras(attics) of Basquefarmhouses. It can last all winter, losing water and wrinkling through a natural concentration process. It does not rot.The latest generation of the Zapiain family, Mikel and Egoitz Zapiain, have taken advantage of this local gem to produce Bizi Goxo(“sour and “sweet”), a traditional ice/dessert cider of superb quality, but with a unique Basque characteristic, reminiscentof the natural cider ubiquitous throughout this region.
