Now headed by the winery’s second generation, Benedicte and Stephane Tissot produce 28 wines from 40 hectares, farmed organically, biodynamically and chemical-free. Their Extra Brut NV sparkling is ageworthy and impressive, comprised mostly of Chardonnay, Pinot Noir, half-fermented in barrique with zero dosage.
