Shan Lin Xi is a delicious Taiwanese High Mountain Oolong. This harvest has surprising flavors reminiscent of a roasted oolong mixed in with its floral bouquet and characteristic minerality. The gongfu journey starts with a delightful pear and magnolia aroma. The first taste has a milkiness that transitions into roasted chicory depths and accompanying sweetness. Minerality is strong throughout. The sip ends with a lingering umami. The energy is gently expansive a little bit cleansing. Peddler's Note: A hot steep will be more tannic and with darker profiles. With water still near boiling temperature, use shorter steeps than you would for the average high mountain oolong Or, use a little bit lower temp, 195º for example, for a smooth creamy easy-steeper.
