Long Asian Eggplant
Solanum melongena Days to Maturity: 80 from transplant These long 6-8" purple fruits just kept on producing all season long! Fruits have wonderful mild flavor. These eggplants performed well in full sun with limited water near Four Corners. Fruits can be eaten in myriad ways such as baba ganoush, eggplant parmesan and roasted eggplant. We do not know the specific origins of this eggplant-- we obtained the seed from a parish in Shiprock, NM where they have been grown every year for years. Strong, stocky plants grew a couple feet tall. Highly recommended as a reliable Southwestern kitchen staple! Planting Instructions: Start Long Asian Eggplant seeds indoors 4 weeks before last spring frost. Transplant outdoors 2' apart after all danger of frost has passed and soil has warmed a bit. Keep soil moist during the hottest part of the summer. Seed Saving Instructions: Remove Long Asian Eggplant seeds from the tastiest, fully mature fruit. Or use a blender with a very low setting-- place fruit
