Sottimano - Barbaresco 'Cotta' 2019

The Cottà vineyard is located between the zones of Neive and Barbaresco, it’s full bodied and rich in polyphenol, typical of the Neive area, while its well balanced tannic structure is definitely a mark of the Barbaresco area. Cottà Barbaresco has liquorice notes and a light touch of smokiness. Dried roses dominate the floral scents. It remains delicate in the mouth and, yet, with plenty of aromatic persistence and well balanced tannins. Meticulous selection of the grapes is followed by spontaneous alcoholic fermentation. After maceration on skins and also a period of submerged cap, the wine is racked into wood where malolactic fermentation is completed. In order to reach its full expressive potential this wine rests in the bottle for about one more year.
