Musician turned winemaker Julien Cruchandeau has been farming Chardonnay and Pinot Noir in the Hautes-Côtes de Nuits and NSG since 2010, producing small-batch wines in a hands-off style. ‘Les Cabottes’ is just as fun and crowd-pleasing as its maker, showing flavors of crunchy red fruit, mushrooms, and wet earth, marked by silky, well-integrated tannins. Serve slightly chilled with red meats, risotto, or game. SOILS Clay, limestone HARVEST & VINIFICATIONMalolactic fermentation occurs 50% in barrel (10% new) and 50% in stainless steel vats. Aged in barrel for 12 months.
