  Tie Guan Yin is a Chinese Oolong Tea produced in Anxi county, Fujian, China. The tea cultivar Tie Guan Yin is said to have been discovered in a Guanyin temple of Anxi county. The Bodhisattva of Compassion, Guanyin,    appeared in the dream of a farmer tending to the temple, sharing with him the secret that a treasure was awaiting him in the cave behind the temple, which happened to be a tea shoot, later planted and named after Guanyin.  The Autumn harvest produces the highest grade of Tie Guan Yin. It has a flowery aroma and mellow refreshing taste. Process Hand harvested in Autumn. Withered and tossed/oxidized under the moon, at night, when the temperature is cool.
