Production Processed & Performance Pollulan is a linear homopolysaccharide of a kind of glucose unit often described as maltotriose, between which is then linked by an α-(1~6) glycosidic bond. The structure shares similarity to linear starch. Pullulan is produced by the fungus Aureobasidium pullulans, and is a naturally occurring polysacchairide.
