Firma del Tempo - The Signature of Time White Wine This wine is one of Bruno Fina's special project, Orizzonti  to create the best of Sicilian wine and put them on the world stage Grape variety: 100% Grillo.  Vineyard: Single vineyard “cru” in the Riserva Naturale dello Stagnone area in Western  Cellar work: Grapes are destemmed and softly pressed; about 20% of the wine ferments in new barriques at ~16 °C; the rest presumably in stainless or large wood.  Ageing: The wine rests on fine lees with bâtonnage for ~12 months, followed by ~2 months of bottle refinement.  Alcohol level: Approximately 13.5%.  Tasting Notes Appearance: Golden-yellow color.  Aroma / Nose: Intense citrus and bergamot, notes of Mediterranean scrub (garrigue), chamomile; strong iodine and sea-breeze salinity reflect the coastal terroir.  Palate / Taste: Fresh, tangy and sharply mineral; strong savoury and saline backbone, lively acidity, and a clear sense of Mediterranean character.  Finish: Persistent and evocative
