Colby Cheese Longhorn Half Loaf

A Wisconsin original cheese! The first Colby was made in 1885 in Colby, Wisconsin. The cheese was named after the village. Longhorn is a style of American Colby cheese defined by its round, long, orange cylindrical shape. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made the same way as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar. Although, all Longhorn cheeses are shaped and packaged the same way, the texture and aging time may vary depending on the cheese type. The distinctly mild flavor makes it ideal for grilled Cheese sandwiches.
