Pumpkin Swordfish
Pumpkin sword are the same species as regular swordfish, but with pumpkin-hued flesh from a diet rich in shrimp and krill. Some aficionados swear that pumpkin sword is sweeter and juicier than a typical swordfish. Since pumpkin swordfish is thought to have a more buttery flavor than the average sword, you don’t want to do too much to the fish before cooking. Rub with your favorite spice mix and sear the filet, or simply broil the fish and melt some compound butter over the top after you pull it from the heat.
