Jhon Didier Chiroso
This week is a syrup bomb of a Chiroso coming from Aviary out of Cleveland, Ohio! It’s been a while since we’ve featured an expressive washed coffee that has structured acidity and sweetness. I pick up on a really nice citrus acidity with a structured maple syrup that lingers throughout. The level of expressiveness in this coffee is turned up to eleven and I would recommend you taste this coffee when cooled down. Did I also mention this coffee is CLEAN? Aviary has a transparent roasting style so I suggest you save some of this coffee and enjoy it across the coming weeks! My recipe for this coffee is my 1:17 higher extraction recipe but I would recommend you experiment with pushing grind even finer. As always, check out the tasting video and let us know what you think.
