Juan Martin Oxidation Washed Sidra
Kumquat, Mango, Vanilla, Pink Grapefruit acidity! This is an incredible presentation of the Sidra varietal from Finca Juan Martin! We taste fruit forward notes of kumquat and mango tied with a structured pink grapefruit acidity that appears when the cup cools. The finish is sweet and clean with a long linger of acidity wrapped in a vanilla-like sweetness. This is also a great example of expressive but clean processed coffee where the fermentation is boosting clarity and acidity without adding any funk! If you enjoy unique varietals, processing, and a dynamic cup this is a great coffee to pick up. Please let this coffee rest for at least 3-4 weeks before brewing! We really think this coffee needs rest time to open up. From Moonwake: We’re excited to share our second release from Juan Martín in Colombia, this time a beautifully complex take on the Sidra variety. This washed lot offers a vibrant and layered cup, opening with bright notes of kumquat, pink grapefruit, and mango
