Java Nestor Lasso

A Thermal Shock processed Java from Nestor Lasso and Finca El Diviso This unique expression of Java is elevated by Nestor Lasso's meticulous processing. In the cup we find tropical acidity, white wine, passionfruit, hibiscus, lemongrass, and more!    This is our first time featuring an advanced processed Java coffee and we're happy to be because it's from award winning producer Nestor Lasso. We find loud tropical notes such as passionfruit and lemongrass, hibiscus, and a layered sweetness due to the thermal shock process. The profile of this cup is quite unique as it has delicate layering and structured notes found in Ethiopian coffees but is then mixed with herbality, spices, and juiciness found in a varietal such as Sidra in the finish. This coffee is cleanly roasted by Boxx on their Probat P-25 and exudes high clarity acidity with a round and sweet finish!
