Brisket is full of connective tissue, so it must be cooked over low heat for a long time, if cooked properly it is fall apart tender and delicious! Cooking a brisket is a labor of love, but low and slow is all you need to remember when cooking this cut, the outcome is well worth the wait. Smoking brisket is a great method to achieve tenderness, it is best to leave all the fat on it so it can render down and provide maximum flavor. We offer three different size options: Medium 6-8 lbs Large 8-10 lbs Extra Large 10-15 lbs All of our beef is USDA approved and dry aged for a minimum of 21 days. Each brisket is individually vacuum sealed, ships raw, and frozen.
