Grapes are whole-bunch pressed for a gentle extraction and tanked for nine months on the lees. Following that, the wine is bottled for a second fermentation and left on the secondary lees for another four years. Finally, it is left fined and unfiltered - with minimal added sulfer.A vibrant palate, with exciting texture and lingering, creamy notes. Subtle strawberry with wafts of pomegranate. An absolute treat.
