It’s all about the sharpened tip. For graphite pencil sharpeners only, you get a sharp, pointed tip. For color pencil sharpeners, you get a sharpened tip too, but it‘s a bit more rounded or squared off tip;  this keeps the color pencil from breaking off or crumbling a bit onto your drawing if too much pressure is applied.
