
Good Luck Soup
A traditional style soup that combines the richness of ham with the earthy flavor of black-eyed peas. Your luck gets better with every spoonful. Just add ham, tomatoes, and water. Directions: Bring 3 quarts of water to a boil. Stir in soup and seasoning packs. Add 2 cups ham and a 15 oz. can of tomatoes. Let soup cook approximately 20-25 minutes or until rice is done. Yield: 14 cups. Hint: Soup will be even richer if you have the time to simmer a ham bone or the 2 cups of ham in the 3 quarts of water for about 30 minutes prior to adding soup packet. You may also substitute Rotel tomatoes or flavored tomatoes for a zestier flavor. Serve with your favorite cornbread.
