Yes, you can cure fresh raw olives at home!  Each autumn California's 2 big canneries and numerous local families harvest the olive crop for brining green olives. If you're interested in trying to brine your own at home, we'll ship a 10 lb box of fresh Sevillano olives to you as long as your address is in the contiguous 48 US states.  Olives are harvested, packed, and shipped Monday through Friday, weather permitting. All shipment travel via UPS Ground charged at our discounted merchant rate as calculated from our zip code to yours. During a typical year, Early, Mid, and Late Harvest waves are released for purchase separately as the crop matures; exact dates as determined by Mother Nature.
