Producer: Clos Cibonne Varietal: 90% Tibouren, 10% Grenache Region: Provence, France The grapes are harvested by hand at the break of dawn.  Immediately, they are destemmed and pressed, and the juice is allowed to naturally inoculate with ambient native yeasts.  Tradition is one of the few rare examples of successfully aged rose.  After fermentation, the wine is racked 100-year-old oak foudres, where it ages for one year.  The uniqueness of the aging process is furthered by the use of fleurette, a veiled yeast that grows atop the wine, much as in the production of Jerez.  Clos Cibonne is a historic vineyard site dedicated primarily to the cultivation of Tibouren, a ancient grape variety that was nearly lost to extinction.  Originally grown in Mesopotamia, Tibouren was propagated by the Greeks, before being transported by the Romans to Italy in the Liguria region, where it is known as Rossese.  Tibouren is a very fine, thin-skinned grape which requires a lot of ventilation to
