They are 3rd generation coffee producers and realized years ago that they could improve their crops' quality through experimenting with new post-harvest drying methods and new varietals like yellow arara and red catuai. They've added new equipment like ventilated static boxes to their drying process that has allowed them to maintain a high level of control during fermentation, resulting in a more complex cup profile.
