We Taste: Ripe Berries, White Wine, Sweet Tea Region: Jinotega, Nicaragua Process: Natural Elevation: 1,300 - 1,500 meters Varietal: Caturra, Catuai This coffee comes to us from the Finca La Bastilla farm, one of two farms owned and operated by La Bastilla Coffee Estates. Located in the north-east region of Jinotega, Nicaragua, Fina La Bastilla is surrounded by the Cerro Datanli El Diablo natural reserve. The volcanic soil the farm sits on, its climate, and its altitude combine to create ideal coffee growing conditions. The coffee in particular is processed through the Estates own milling station. This coffee goes through the natural process, meaning the cherries are picked ripe and laid out to dry before having the fruit of the cherry removed. From this coffee we get strong ripe berry/fruit notes, such as: blueberries, strawberries, and raspberries. The fruity sweetness is rounded out by a white wine acidity and a sweetened rich black tea like body.
