
Jamaican Jerk Mustard Sauce
My Jamaican Jerk Mustard Sauce was inspired by my middle sons love for a Jerk seasoning that I make and have used for several years. One day I was rubbing down some ribs with the original Sweet and Spicy mustard and I thought to myself, I wonder what my Jerk seasoning would taste like paired with the mustard on the ribs. One bite of those ribs and I knew that I was onto something. I focused on the warm cinnamon and allspice that you find in a lot of Jerk food and only a little heat so that it is appealing to all palates. A little apple cider vinegar and brown sugar add the perfect tart and sweetness to this mustard. It is delicious on seafood, chicken, pork, and grilled vegetables. Baste a pineapple with it for grilling and it is off the chain. It makes killer chicken wings as well as a delicious base sauce for Jerk chicken pizza. It is also the perfect sauce for pineapple coleslaw that is spot on for all kinds of seafood tacos!
