We order and purchase FRESH, NEVER frozen, farmed raised Atlantic salmon. These fish are raised in the waters off the coast of British Columbia at the mouth of the Campbell River.After it’s brought to my facility each fillet is further inspected and cut intoapproximately 6-7 ounce pieces. The pieces are then dredged in a dry rub madefrom a blend of spices that Steve perfected many years ago. It’s refrigeratedovernight, rinsed the following morning, dried to form the most important pellicle, and then smoked using aproprietary blend of hardwood chips in our Western Cedar Smokehouse.  The moisture content, low sodium and award winning flavor makes our smoked salmon truly the Best in the Northwest. Important Information: NO SOYZERO NITRATESLOW SODIUMGLUTEN FREEAll products are professionally vacuum packaged in 3mil bags and labeledaccording to WSDA directives. Shelf life:9 months unopened and refrigerated below 38 degrees Fahrenheit.
