Jim's Dark Room
JIM’S DARK ROOM Grandpa Jim McCafferty has influenced Bindle in countless ways. His family homesteaded in Nebraska in 1883—the same year Jessup Farm was founded. Jim was a chemistry professor at Chadron State College and had many side hobbies, including coffee roasting, baking and film photography. His basement housed a darkroom filled with gear and developing equipment, where he meticulously developed each photo and organized them into slides. He also built a homemade coffee roaster from a shop vac, chicken wire, and an old popcorn popper. I was gifted this ingenious contraption—and with it, thousands of slides and film negatives. Our signature dark roast, Jim’s Dark Room (formerly Bunker Blend), pays homage to Grandpa Jim. It marks a transition from Bunker Blend—born during the lockdown—to something richer, more personal, and full of wonder.
