The Ochochoque Washed originates from the southeastern city of Puno, Peru. This coffee was produced by a farmer named Abdon Quilla Ochochoque. Abdon is a second generation producer, who took on his family’s two hectare coffee farm, Chillimana Chucalpampa, following his fathers passing. Despite all of the adversity he has faced since inheriting the farm, he has pushed forward focusing on producing quality driven lots. He was able to accomplish this in production through joining a cooperative, where he was able to receive both educational and technical assistance. This washed lot is a Bourbon varietal that starts with 15-20 hours of fermentation, wet and then is dried on raised beds anywhere from 10-20 hours until ideal moisture levels are reached. The resulting cup is fresh, floral, and sweet. On the palate it starts off with the fresh acidity of ripe stone fruit like white or yellow nectarine.
