Variety: Typica Mejorado Process: Washed Sourced by: CCS Typica mejorado – the elusive variety that BOTZ has yet to roast, but has consumed our thought process. We’ve had the opportunity to taste the variety on numerous occasions and have always enjoyed the subtle stone fruit notes and tea-like florals it showcases. Admittedly at BOTZ, we’ve had a goal centered on this variety for quite some – find an outstanding and idyllic green representation and turn it to 10 in the BOTZ style. We had visions of stewed apricots and peaches with sticky sweetness and hints of dried berries – an unabashedly direct, focused, and aggressively fruity profile. Juan Peña’s masterful processing and cherry selection at Finca La Papaya provided a flawless green coffee that we could not stop cupping. Stone fruits, tropical fruits, and a bit of berries melded together to create a nuanced complexity that had our CPU glitching a bit. The body was structured and substantial. The sweetness was lingering and full.
