We’re excited to share our first purchase from Diego Bermudez’s farm, Finca El Paraiso in Cauca. This micro-lot is a single Pink Bourbon variety lot. In the cup: a jasmine-tea body with fruit-forward, floral aromatics, mulberry sweetness, and peach-like acidity; as it cools, watermelon juiciness shows through and the finish turns to gentle tropical fruits. Although it is a sweeter coffee we have found this coffee to be still clean of fermentation notes and quite elegant and complex. For us this is a lovely dessert coffee after lunch or dinner. Available for a limited window; until December 31. For peak clarity and sweetness, we recommend brewing from three weeks after roast to 7 weeks.
