2015 Agusti Torello Mata Cava Ubac Organic Gran Reserva DO, Spain

Agustí Torelló Mata Ubac Gran Reserva comes from vines over 30 years old. These vines are cultivated sustainably using environmentally friendly techniques and no harmful chemicals. Production is limited to increase the concentration of the grapes and when they reach optimum ripeness, they are selected and harvested manually, one by one.In the winery, the Agustí Torelló Mata Ubac Gran Reserva grapes are gently pressed. The must is placed in small stainless steel tanks and each variety is vinified separately over 3 months at a controlled temperature. Then, after the winemaker's coupage, a second fermentation takes place in the bottle over 30 months. Finally, the bottle is uncorked to remove the lees and it is sold with the year of harvest and the date of disgorgement printed on each label.Agustí Torelló Mata Ubac Gran Reserva is a sparkling wine made through a thorough selection of grapes, a select coupage and long aging. As a result it shows all the elegance and typicity of a good cava.
