Mexico San Pedro
We are thrilled to be bringing back coffee from the Mixteca region of Oaxaca, Mexico. This crushable coffee was cultivated by the San Pedro Yosotatu community. “Yosotatu” means “The sheriff who watches from the top of the mountain” in the Mixtec language. This remote coffee growing community is made up of 40 families who are seeking independence from larger organizations. Many of Mexico’s indigenous communities that have chosen to move higher and higher up in elevation and onto smaller and smaller plots of land originally chose to do so in order to escape colonial Spain. Many of the producers in San Pedro are bilingual, speaking Mixtec and Spanish. The autonomy they now have empowers them to organize together to produce unique and quality coffee for the specialty market. Most producers in Yosotatu own just 1-2 hectares of land and they often process their own coffee from home. The typical fermentation process lasts 18-24 hours and drying takes place on mats for up to 10 days. The a
