Beef Short Rib, also known as "braising rib" is a beefy, moist and full of flavor cut of meat. This is taken from the chuck plate, or rib area of the cow and consists of the shorter portion of the rib bone. This cut has plenty of meat on the bone which is perfect for cooking low and slow. The meat will fall right off the bone and melt in your mouth.
