Water is a really complex topic, especially when it comes to replicating coffee that you tried elsewhere. Each county tends to have a different tap blend - some hard, some soft - and it can be really annoying to dial in what good coffee tastes like on waters like that. Not only will it be hard, but water at the county level will also fluctuate with the seasons as more minerals are introduced to counteract certain microbial developments during hotter months.  So usually, we recommend starting with a blank slate. When you start with distilled water, you can blend minerals like these into a gallon at a time, establishing a great baseline for you to work off of. Not only is it a great baseline, but we evaluate our coffee at the lab level on these water blends, so you can try coffee at home the exact way we intended it by using these little
