Mexican Decaf is made so by the Swiss Water Process. A natural method of removing (most) of the caffeine from the coffee beans. There is no natural or chemical process that removes 100% of the caffeine. But, these processes do remove greater then 95% of the caffeine from the beans. And Arabica coffee contains approximately 1% caffeine, by weight. So a decaf coffee MAY This is a natural/organic method. Which does not affect the organic certification or growing method.
